Joe Archer is employed as the City Forester for the city of Logan, Utah, and holds a degree in Forestry from Utah State University and a degree in History from Florida State University. Joe enjoys consulting with various citizens, school groups, and governmental agencies in the Rocky Mountain area, sharing his expertise in urban forestry and tree care; and he has achieved numerous awards and professional certifications in his field. A native of southern Indiana, Joe has enjoyed cooking with a smoker since he spent ten years operating a country inn and restaurant, "Archer's Inn," near the Beech Mountain ski resort in the mountains of North Carolina. Archer's Inn specialized in country cooking served family style and drew guests from much of the eastern United States. Joe built the log home where he and his wife, Kathy, currently reside in northern Utah. Joe and Kathy get a kick out of entertaining family, friends, business associates and groups of all sizes on the deck of their home, overlooking beautiful Cache Valley. Joe and Kathy are accomplished Dutch Oven chefs and won the grand prize in the first Dutch Oven cooking contest they entered. Their cooking style can only be described as adventuresome, and they enjoy treating their guests to a wide variety of fun and delicious foods. Joe is probably best known, however, for his locally famous, to-die-for smoked ribs, smothered in his renowned, top-secret "Big Joe's BBQ Sauce." Besides putting together fantastic meals, Joe likes to spend his spare time playing with his grandkids or caring for his horses, which include a team of Clydesdales and some beautiful paint riding horses. |
